STRAWBERRY BREAD | |
2 (10 oz.) pkgs. thawed frozen strawberries 4 eggs 1 1/4 c. vegetable oil 3 c. flour 3 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 2 c. sugar 1 1/4 c. pecans, chopped Preheat oven to 350 degrees. Grease and flour 2 (9 x 5 inch) loaf pans. Mix together berries, eggs and oil. Sift dry ingredients into berry mixture. Stir to blend thoroughly; mix in the nuts. Pour into loaf pans. Bake 1 hour or until toothpick comes out dry. Remove from oven, when partially cool. Remove bread from pans to finish cooling. Yield: 2 loaves. Can bake ahead and freeze. |
