STRAWBERRY BREAD 
1 1/2 c. all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2/3 c. salad oil
2 eggs, well beaten
1 c. sugar
1 1/4 c. sliced fresh strawberries
1/2 c. chopped pecans

Combine flour, cinnamon, soda and salt and set aside. In another bowl, beat together oil, eggs and sugar. Gradually add dry ingredients to creamed mixture, mixing just until all ingredients are moistened. Stir in strawberries and pecans. Pour batter into a greased 9 x 5-inch loaf pan and bake in a preheated 350°F oven for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool in pan.

Makes 1 loaf.
