STRAWBERRY-NUT BREAD | |
3 c. all-purpose flour 1/2 tsp. salt 2 c. sugar 4 eggs 1 c. chopped nuts 1 tsp. baking soda 3 tsp. cinnamon 2 c. sliced fresh strawberries 1 1/4 c. oil Sift the dry ingredients together into a large mixing bowl. Make a well in the center. Mix together the strawberries, eggs and oil and pour into the well. Stir just enough to dampen all ingredients. Quickly stir in the nuts. Pour into two well greased loaf pans, filling no more than half full. Bake in preheated 350 degree oven 45-60 minutes or until toothpick inserted in center comes out clean. Cool 20-30 minutes before removing from pans; finish cooling on wire racks. Do not slice until bread is completely cool. |
