STUFFED BELL PEPPERS 
4 large bell peppers, cut out tops and scrape out all seeds
1 lb. ground beef
1 box broccoli and cheese rice mix
1 (16 oz.) can seasoned tomato sauce
cheese slices

Preheat oven to 350°F. Brown and drain ground beef. Make rice mix according to directions, except substitute tomato sauce for water. If not enough tomato sauce, finish up with water.

Place bell peppers in boiling saltwater for 5 minutes. Mix all ingredients together, except peppers.

Drain peppers upside down, then stuff peppers with mixture. Cook in oven about 20 minutes. Take out and place a slice of cheese on top. Put back in oven and cook until cheese is melted.
