BLACK - EYED PEAS 
1-2 pkg. frozen black eyed peas
Salt pork
Salt & pepper

Or use fresh - discard ends, shell a whole bunch peas and then just break some too, like for green beans.

Cook salt pork in approximately 4-6 cups water in a large pot for 1 hour. Add peas, salt and pepper to taste. Cook at least 1-2 hours. The more you cook them, the better they are. You may need to add water during cooking.
