BLACK - EYED PEA SALAD 
2 (10 oz.) pkgs. frozen black-eyed peas
1 c. Italian dressing
1 tsp. sugar
1/4 tsp. crushed red pepper
1/2 c. celery, sliced
1/2 c. green pepper, chopped
1/2 c. red bell pepper, chopped
1 bunch green onions
1/4 c. parsley, chopped
Salt & pepper to taste
Lettuce leaves

Cook peas as directed on package, drain. Shake Italian dressing, sugar and crushed red pepper in tightly covered container. Combine cooked peas, dressing, celery, green pepper, red pepper, onions, parsley, salt and pepper. Chill. Serve over lettuce leaves.
