BLACK - EYED PEA SALAD 
2 (15 oz.) cans black eyed peas, rinsed & drained
2 green onions
1 red bell pepper, seeded & finely chopped
1/2 green bell pepper, seed & finely chopped
1/4 c. chopped fresh parsley
1 clove garlic, peeled & finely minced

DRESSING:

1/2 c. olive oil
3 tbsp. red wine vinegar
1-2 tbsp. dry mustard
1 fresh jalapeno, seeded & finely minced
Salt & pepper

In large bowl combine peas, onions, red and green peppers, parsley and garlic. In small bowl whisk together the dressing ingredients. Pour over the mixture, toss and serve immediately.
