BLACK EYE PEA SALAD | |
3 (15 oz.) can black eye peas, rinsed & drained 1 (2 oz.) jar diced pimiento, drained 1/2 c. diced purple onion 1/4 c. vinegar, white 1/4 c. + 2 tbsp. red wine vinegar 1/4 c. + 2 tbsp. sugar 1/4 c. + 2 tbsp. vegetable oil 1/4 tsp. ground red pepper 1/4 tsp. salt Combine first 3 ingredients in bowl. Toss gently. Set aside. Combine all ingredients and mix. Pour over pea mixture and mix gently. Chill at least 3 hours. Serves 6 to 8. |
