1 lb. mixed summer squash and zucchini 1/2 onion, thinly sliced 4 eggs 1 1/2 to 2 c. grated cheese (your choice) Salt and pepper to taste 1/2 tsp. dried oregano 1/2 tsp. dried basil Lightly steam squash and onions (or microwave). Mash squash, but leave it chunky. Beat eggs and cheese. Add squash and onion mixture to egg mixture. Add salt, pepper, oregano, and basil. Pour into greased baking dish and bake covered in 325 degree oven until set, about 30 to 40 minutes. VARIATIONS: Substitute other vegetables for the squash. Add shrimp, crab, or chicken. Use a pie crust. Use a brown rice crust, cooked. |
