APPLE - FISH KABOBS | |
1 green pepper in 1 1/2 inch squares 1 Golden Delicious apple, thickly sliced 1/2 lb. red snapper, cod, or halibut in 1 1/2 inch cubes 6 cherry tomatoes 2 tbsp. lemon juice 1 tbsp. melted butter 1/4 tsp. salt Dash pepper Dash thyme On 6 bamboo skewers alternate green pepper, apple, fish, tomato, apple, fish, and green pepper. Combine remaining ingredients; brush over all surfaces. Broil 3-4 inches from heat, 2 minutes per side (8 minutes total time) or until fish is cooked and flakes easily with fork. Makes 3 servings, 233 calories each. |
