CREAMY POTATO PUFF 
1 (8 oz.) cream cheese
4 c. mashed potatoes
1 egg, beaten
1/3 c. finely chopped onion
1/4 c. chopped pimento
1 tsp. salt
Dash of pepper

Combine soft cream cheese and potatoes, mixing until well blended. Add remaining ingredients. Bake at 350 degrees for 45 minutes. 6-8 servings.
