EASY PUMPKIN MUFFINS 
1 1/2 c. sugar
1 c. oil
3 eggs
1 lb. can pumpkin
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 20 minutes.

Super easy to make. Excellent flavor and extremely moist. My husband and kids keep raving that if was the best bread they have ever had. They keep asking me to make it again. If came out like Mimi's carrot loaf. I definitely recommend it.

These are not only easy, but delicious. I don't have a mixer and was able to stir, stir, stir. No butter, just oil. I made them with and without nuts. I added a few extra spices... They were moist and tasty!! I'm going to try them next with applesauce instead of oil for a low calorie version. Wish me luck!!
