EASY PUMPKIN MUFFINS 
1 1/2 c. sugar
1 c. oil
3 eggs
1 lb. can pumpkin
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Measure all ingredients in a big mixing bowl. Beat together well for 5 minutes. Pour into cupcake pans (fill more than 1/2 full). Bake at 400 degrees for 20 minutes.

These are great but I highly recommend cutting the amount of sugar to half of what's called for. I did this and added dark chocolate chips and everyone raved about them.

Super easy and super delicious! I make them as little two bite mini muffins with chocolate chips. Every party I bring these to, they are the first dessert to go.

I cook for 8 minutes to make mini muffins.

You are right. I made these and could eat them by myself. I read all the comments and used some of the suggestions. They went along for our xmas dinner. Added pumpkin spice and raisin and mix sugar/cinnamon sprinkled on top. This made them extra special!

It was great the second time! The first time I forgot the flour and they were nasty! But I subbed in 1/2 cup of brown sugar in place of a 1/2 cup of the sugar needed.

So easy. I made with my four year old to take for snacks fir her preschool class. I used whole wheat flour, and half the sugar, for a healthier school snack, because we have criteria to meet when it is our turn to send the class snack. I made 24 mini muffins. With remainder of the batter I added mini chocolate chips and chopped pecans and made 10 more regular size muffins for home. Yum!

I really love this recipe. It's so easy to throw together and the muffins are so moist. The flavor is also mild so it's a good base to add things you like.(nuts, raisins, fruit, choc chips etc.) made them plain and my family loved them. Whip up some frosting and it's simply divine
