GRANDMA ERICKSON'S FILLED
COOKIES
 
3 c. flour
1 rounded tbsp. cream of tartar
1 tsp. baking soda
1 tsp. salt
2 sticks butter
2 eggs
1 1/2 c. sugar
2 tbsp. vanilla

Sift flour, cream of tartar, soda, and salt 3 times. Add butter, mix like pie crust.

In another bowl, whip eggs real well, add sugar and vanilla. Mix with flour and let cool before rolling.

FILLING:

1 c. chopped nuts, dates or raisins
1/2 c. sugar
1 tbsp. flour
1 c. water

Boil together and cool. Cut cookies out of cooled dough, top with 1 teaspoon filling and cover with another cookie, no need to press together. Bake in 375 degree oven.
