APPLE PIE FILLING 
2/3 c. sugar
1/3 c. brown sugar
3 tbsp. flour
1 tsp. cinnamon
1/2 tsp. ginger
1/8 tsp. salt
7 c. Granny Smith apples, peeled and sliced (8 apples)
1 tbsp. lemon juice
2 tbsp. butter, cut up
1 tbsp. milk

Mix sugars, flour, cinnamon, ginger and salt and toss with apples. Spoon filling into pie shell, sprinkle with lemon juice and dot with butter. Place top pastry on filling and trim dough to a 1 inch overhang. Flute to form a decorative edge. Brush top with milk and sprinkle with sugar. Cut vents in crust. Bake 15 minutes in 425 degree oven and reduce to 375 degrees and bake 35 to 40 minutes more until filling bubbles. If crust browns too quickly, cover loosely with foil.
