BOTTLED APPLE PIE FILLING 
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt

Blend above 5 ingredients together, then stir in 10 cups water. Cook and stir until thick.

3 tbsp. lemon juice
2 or 3 drops yellow food coloring
3 tsp. dehydrated lemon peel

Peel and slice apples (approximately 6 pounds). Put into cooked mixture. Heat thoroughly. Pack into sterilized hot quart jars leaving 1-inch of head space. Put into hot water bath and process 20 minutes. 1 quart makes a 9-inch pie. To make pie, dot filling with butter and bake at 400 degrees for 50 minutes.
