TURKEY RICE PILAF SALAD 
2 tbsp. oil, 1 tbsp. oil
1 pkg. UNCLE BEN'S® wild rice and long grain rice minus the seasoning pkg.
4 green onions, sliced
1/2 lb. mushrooms, sliced
1/2 lb. oven roasted boneless turkey breast
1/4 tsp. salt
1/2 lb. cooked ham
1/2 lb. seedless grapes
1/4 c. red wine vinegar
2 tsp. prepared mustard
1 1/4 tsp. sugar
1/4 tsp. black pepper
1/2 tsp. thyme
1/2 c. toasted slivered almonds
2 avocados

In a 4 quart saucepan over medium high heat in 2 tablespoons oil, cook green onions, mushrooms, and 1/4 teaspoon salt until tender and lightly browned, stirring frequently. Add water and rice according to directions on UNCLE BEN'S® box (excluding the seasoning). Cook until liquid is absorbed.

Remove from heat. Cut grapes in 1/2 and meat in small cubes. In a large bowl mix vinegar, mustard, sugar, thyme, pepper, 1 tablespoon oil, 1 teaspoon salt. Add rice mixture, ham and grapes and nuts. Toss and coat well. Cut avocado into chunks and mix in. 8 main dish servings.
