LIGHTHOUSE LUNCHEON SALAD 
2 pkgs. UNCLE BEN'S® wild rice mix
2 whole chicken breasts
3/4 c. Hellmann's mayonnaise
6 oz. jar artichoke hearts, sliced
4 oz. jar pimentos, sliced
2 c. chopped celery
1 c. chopped green pepper
1 pkg. Gold Seasons Italian dressing prepared with vinegar and oil
1 lb. fresh mushrooms, sliced

Prepare rice as package directs, 1/2 cup less water. Cook chicken and cut into cubes. Combine rice and chicken with 1 cup mayonnaise and cool completely. Combine artichoke hearts, pimento, celery and green pepper with the salad dressing mixture. Mix all together. Gently fold in mushrooms just before serving. Serves 20.
