DO AHEAD STUFFED BAKED POTATOES 
4 med. baking potatoes (about 2 lbs.)
1/3 c. butter
1/2 c. grated sharp cheddar cheese
1/2 c. light cream
2 tbsp. chives
3/4 tsp. salt
Pepper to taste
Paprika

Preheat oven to 425 degrees. Scrub potatoes and pierce skin with fork. Bake about 1 hour. Cut potatoes in half lengthwise and scoop out inside. Leave skin intact for shell.

With electric mixer, beat potatoes, butter, cheese, cream, chives, salt and pepper until smooth and light. Spoon mixture into shells, fluffing up center. Sprinkle with paprika. Let cool completely. Wrap in plastic wrap and freeze.

To serve, remove from freezer. Discard wrap. Bake uncovered at 450 degrees for 30 minutes. Makes 8 servings. Great for holidays to save time.
