DON'S ZUCCHINI CASSEROLE 
2 tbsp. butter
1 med. onion
1 lb. ground round
1/2 tsp. salt
1/2 tsp. ground pepper
3 med. zucchini (1 lb.)
6 slices sharp cheddar cheese (6 oz.)
1 can cream of mushroom soup
1/2 - 1 c. saltine cracker crumbs

In a skillet, melt the butter and saute the onion, finely chopped, until transparent but not brown. Add the ground round, the salt and pepper and brown the meat.

Put the zucchini, whole in a pot of water, with 1 teaspoon salt and bring to a boil, leaving the zucchini in for five minutes of boiling time. Remove from the water and cut into 1/4" slices.
