MINI - CHEESE CAKES 
2 (8 oz.) cream cheese
2 eggs
1/2 c. sugar
1 tsp. vanilla
Vanilla wafers

Mix together cream cheese, eggs, sugar and vanilla. Place 1 vanilla wafer in the bottom of cupcake papers and fill 3/4 full with cheese mixture. Bake 12-15 minutes at 325 degrees. When they start to crack on top they're done. Spoon favorite pie filling on top and refrigerate.
