MINI CHEESE CAKES 
12 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs and mix well. Line muffin tin with foil cupcake liners. Place one vanilla wafer in each liner. Pour cream cheese mixture over wafers, filling 3/4 full. Bake 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with fruit, pie filling, preserves, nuts or chocolate. Or whatever you like. Makes 12.
