MINI CHEESECAKE 
Vanilla wafers
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
1 tsp. vanilla
2 eggs

Mix cheese, vanilla and sugar until well blended and smooth; add eggs and mix well.

Line small muffin tins with foil liners. Place a wafer on liner and pour mix over until 3/4 full. Bake 20-25 minutes at 325 degrees. Chill. Top with jam, nuts or chocolate.
