POTATO FILLING 
3 c. hot mashed potatoes
2 eggs, well beaten
1 qt. bread cubes
1 1/2 tbsp. parsley
1/2 onion
2/3 c. diced celery
2 tbsp. melted butter
1 tsp. salt
Pinch of pepper

Cook onion and celery in butter until brown. Mix potatoes, eggs, bread cubes, celery, onions, parsley and rest of ingredients, mix well. Butter casserole and place into the mashed potatoes. Bake 30-35 minutes or until lightly brown at 325 degrees. Serves 8.
