POTATO FILLING 
4 c. mashed potatoes, unsalted
2 eggs, beaten
Salt and pepper to taste
1 c. milk
1/4 c. butter
1 onion, chopped
2 c. bread crumbs
1/4 tsp. sage
1/4 tsp. thyme
1 tbsp. parsley

Combine mashed potatoes, eggs, salt, pepper and milk. Saute onion in butter, add bread crumbs and seasonings. Toss lightly. Stir in potato mixture. Turn into a casserole and bake at 350 degrees for 20 to 30 minutes.
