POTATO FILLING | |
5 med. potatoes 1 egg Parsley to taste Salt and pepper to taste 3-4 celery stalks, chopped 1 lg. onion, chopped 3/4 to 1 loaf sandwich bread, cube and let dry out 1 day ahead Prepare potatoes for mashing, very soft. Add egg, parsley, salt and pepper. Set aside. In large skillet, brown celery and onion in oil. Add bread to skillet, stir thoroughly. In large bowl, combine potato mixture and bread mixture. Cook in casserole at 350 degrees for 45-60 minutes. Can be frozen before cooking. Use as side dish (like mashed potatoes). Serve with gravy. |
