POTATO FILLING 
6 to 8 potatoes, peeled and quartered
1/2 to 3/4 loaf of bread
3 lg. onions, chopped
6 stalks celery, chopped
3 tbsp. parsley, chopped
2 eggs, beaten
Milk
Butter
Salt and pepper
Approximately 1 c. broth (chicken, turkey, beef)

Boil potatoes until done. Mash with butter and milk. Set aside. Saute onions, celery, and parsley in butter. Break bread into small pieces. To bread, add onions, celery, parsley, beaten eggs, and broth. Mix well with spoon. Add mashed potatoes to bread mixture. Stir well. For smoother consistency, beat with electric mixer. Add salt and pepper to taste. If filling seems too dry, add more broth or milk. Bake at 350 degrees for about 1/2 hour. Filling should be lightly browned.
