SPICY CHICKEN | |
1/4 c. peanut oil 1 lb. chicken cutlets 1 tbsp. sherry 1 tbsp. light soy sauce 1 tbsp. cornstarch 2 tbsp. hoisin sauce 1/2 tsp. crushed red hot pepper 1 tbsp. chopped scallion 1 tsp. chopped ginger 1. Slice chicken into strips or cubes. Mix sherry, light soy sauce and cornstarch. Marinate chicken in this mixture. Let stand for a few minutes. 2. Heat oil. 3. Add chicken mixture. Stir 2 minutes. Take chicken out. 4. Add hoisin sauce, pepper, scallion and ginger. Stir 2 minutes. 5. Put chicken back in and stir well. 6. Serve. |
