KT'S LEAN AND DIRTY RICE 
This is a healthy alternative to a super fast, cost efficient and yummy meal!

1 (8 oz.) pkg. Zatarain's dirty rice mix (or similar, low sodium preferred)
1 or 2 chicken breasts, boneless & skinless (remove fat)
2 tbsp. olive oil
1 tbsp. Zatarain's liquid shrimp & crab boil (optional)

Dice, shred or ground chicken breasts. Cook until slightly pink in tint. Drain, set aside briefly.

Bring to a boil in a 2 1/2 quart saucepan the amount of water suggested on the packaging (usually 2 1/2 cups) and add 2 tablespoons of olive oil.

Add prepared chicken to boiling water/oil mix, boil for approximately 5 minutes.

Add rice to water, boil for another 5 minutes uncovered.

Reduce heat to medium-low (happy medium), cover and simmer for 25 minutes, stirring occasionally.

Once rice is tender and cooked through, removed from heat and let sit for 5 to 8 minutes.

Serve with garlic bread, rolls or cornbread and dig in!

Variation: For a spicy version stir in liquid shrimp & crab boil to rice after cooking.
