POTATO LATKE 
10 med. potatoes
2 med. onions
3 med. eggs
1/4 c. flour
Salt & pepper to taste
Oil for frying

Peel potatoes if desired, otherwise grate potatoes alternately with onions. Blend eggs, flour and seasonings into grated mixture. Drop mixture by heaping tablespoon into oil and brown on each side. Drain on paper towel. (Can be frozen and reheated in 450 degree oven for a few minutes before serving.) Freeze on cookie sheet and put into plastic bags. Serve with applesauce or yogurt or sour cream.
