POTATO LATKES 
2 potatoes
1 egg
Salt & pepper to taste
2 tbsp. flour
Oil for frying

Wash, peel and grate potatoes. The food processor works great for this. Beat egg and mix all ingredients except oil. Drop by tablespoonsful into the hot oil. Fry on both sides. Drain on a paper towel. Serve with applesauce.
