POTATO PANCAKES (LATKES) 
6 med. potatoes
1 sm. onion (optional)
2 eggs, slightly beaten
3 tbsp. flour
1/4 tsp. pepper
1 tsp. salt
1/2 tsp. baking powder

Peel and grate the potatoes and onion. Let stand 10 minutes so that the liquid will rise to the top. Remove the liquid. Stir in eggs. Add other ingredients. Drop by spoonfuls into a hot, well greased skillet. Brown on both sides. Drain on absorbent paper. Serve hot with apple sauce, sugar, or sour cream.

This is a Chanukah recipe. We have made it in school every year for my class.
