POTATO LATKES 
3 c. grated potatoes
1/2 c. shredded onion
2 beaten eggs
2 tbsp. flour
1 tsp. salt
2 to 3 tbsp. rendered chicken fat, melted or vegetable oil
Dairy sour cream or applesauce

In large bowl, stir together potatoes, onion, eggs, flour, and salt. Mix well. Grease a hot griddle or skillet with melted chicken fat or vegetable oil. Drop batter by tablespoonfuls onto griddle or skillet. Spread the batter slightly. Fry until browned, 2 minutes per side. Keep pancakes warm as more are fried. Serve hot with sour cream or applesauce. Makes 6 to 8 servings.
