FRESH APPLE CAKE 
1 1/2 c. oil
2 c. sugar
3-4 chopped apples
3 eggs
2 tsp. vanilla
1 1/2 c. chopped pecans
1 tsp. cinnamon
1/2 tsp. nutmeg
3 c. self-rising flour

Icing:

1 c. sugar
1 stick butter
1 can condensed milk
1 tsp. vanilla

Mix eggs, sugar, oil & vanilla well. Then mix in dry ingredients. Put in greased pans or 2 loaf pans and bake for 45 minutes to 1 hour at 300°F.

Icing: Mix in saucepan 15 minutes before cake is done. Mix until thick, stirring constantly. Use an ice pick to poke small holes in cake and drizzle icing over and into cake.
