FRESH APPLE, PEACH OR BLACKBERRY
CAKE
 
3 to 4 c. fruit, prepared as necessary

SPICY TOP - Prepare ahead:

3 tbsp. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg

3 tbsp. melted butter

1/3 c. jelly beaten with
1 tbsp. water or orange juice

(Use strawberry, grape or currant jelly.)

BATTER:

1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. sugar
1/4 c. butter
1 egg
1/4 c. milk

Combine dry ingredients. Cut in shortening. Combine egg and milk and add to flour mix, blend well. Spread in a greased 13 x 9 inch pan. Arrange fruit over the batter (apples and peaches in nice rows). Sprinkle Spicy Topping over all then pour melted butter over.

Bake in a 400 degree oven for about 30 to 35 minutes until top of batter is firm. It may be necessary to lower heat. When done, rush with jelly mix while still hot. Use any jelly or jam you wish, grape, currant or strawberry. You may double to fit a cookie tin.
