FRESH APPLE CAKE 
4 c. fresh apples, peeled and diced
1 c. cooking oil
1 tsp. vanilla
2 eggs, beaten
1 c. nuts
2 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
2 c. sugar

Mix all ingredients together. Pour into 8 x 12 inch greased and floured pan. Bake at 350 degrees for 1 1/2 hours. Mix some powdered sugar and water to make a thin glaze. Pour over top of cake while still hot.
