FRESH APPLE POUND CAKE 
1 1/2 c. vegetable oil
2 c. sugar
3 eggs
3 c. self rising flour, sifted
2 tsp. vanilla flavoring
1 c. coconut (opt.)
1 c. chopped pecans
3 c. diced fresh apples, peeled

Mix all ingredients in a large bowl with a spoon. Bake 1 hour at 350 degrees in preheated oven in a buttered and floured bundt cake pan or until cake tests done. Spoon cream cheese frosting on top and drizzle sides of cooled cake.

CREAM CHEESE FROSTING:

4 oz. cream cheese, softened
1/4 c. butter, softened
1 c. powdered sugar
1/2 tsp. vanilla flavoring

Cream cheese and butter until smooth. Add powdered sugar, beating until light and fluffy. Stir in vanilla, blending until smooth.
