SOUTH OF THE BORDER STUFFED BELL PEPPERS | |
1 lb. ground beef 1 clove garlic, minced 1 tbsp. chili powder 1 tsp. salt 1 tsp. sugar 1 1/2 tsp. jalapeno, chopped 4 green onions, chopped 3/4 c. tomato sauce 1/2 c. cream style corn 1/2 c. bread crumbs 6 lg. bell peppers 1 lg. tomato, chopped Cut off tops of bell peppers and place bell peppers in pot of boiling water with salt. Cover and boil 5 minutes. Drain. In skillet, saute beef, garlic, chili powder, sugar, jalapenos, and green onions. Drain off grease. Add chopped tomato, corn, tomato sauce, and bread crumbs. Simmer 4 minutes. Stuff peppers and bake, covered, at 350 degrees for 40 minutes. May uncover last 10 of those minutes. |
