STRAWBERRY UPSIDEDOWN CAKE 
3/4 c. butter, divided
1 c. sugar, divided
1 pt. hulled strawberries
1 tsp. grated lemon rind
1 tsp. cornstarch
1 egg
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk

Melt 1/4 cup butter in 9 inch square pan. Mix 1/2 cup sugar, berries, lemon rind, and cornstarch. Spread evenly in pan. Cream 1/2 cup butter with 1/2 cup sugar. Beat until light. Sift dry ingredients and add to first mixture alternately with milk, beating until smooth. Spread carefully on berries.

Bake 30 minutes at 375 degrees. Let stand 10 minutes and serve warm.
