DOUBLE BLUEBERRY PIE 
3/4 c. sugar
3 tbsp. cornstarch
1/8 tsp. salt
1/4 c. water
4 c. fresh blueberries
1 tbsp. butter
1 tbsp. lemon juice
1 (9 inch) pie shell, baked
Whipped cream

In a medium saucepan, combine sugar, cornstarch and salt. Add water and 2 cups berries and cook over medium heat, stirring constantly, until mixture comes to a boil and is quite thick and clear. Remove from heat and stir in butter and lemon juice, cool. Place remaining blueberries in pie shell and top with the cooked berry mixture. Chill and serve garnished with whipped cream.
