HUSH PUPPIES 
1 c. yellow cornmeal
1 c. flour
1 tsp. baking powder
1/4 tsp. red pepper
3/4 tsp. salt
1/4 tsp. black pepper
1/8 tsp. white pepper
1/8 tsp. oregano leaves
1/4 c. minced green onions
2 garlic cloves, crushed
2 beaten eggs
1 c. milk
2 tbsp. lard, unsalted butter, salad oil or bacon drippings

In large bowl, combine dry ingredients, stir in green onions and garlic. Add eggs and blend well. In small saucepan, bring milk and lard or other fat to a boil. Remove from heat and add to flour mixture 1/2 at a time, stirring well after each addition. Refrigerate 1 hour. Fry in a skillet or deep fryer heated to 350 degrees. Cook 1 minute on each side. Serve warm.
