ZUCCHINI BREAD 
1 1/2 c. grated zucchini
2 c. flour
1/4 tsp. salt
1/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. mace
1 tsp. cinnamon
1 c. sugar
2 eggs
1/2 c. oil
1 tbsp. lemon juice
1 tsp. vanilla extract
1/2 c. chopped walnuts or other nuts as desired

Preheat oven to 325 degrees. Grease loaf pans. Grate the zucchini; set aside.

Stir together the dry ingredients. Combine the wet ingredients. Make a well in the dry ingredients and pour in the liquid. Stir to blend well, then stir in the zucchini and nuts. Pile into greased loaf pan or mini loaf pans. Bake 1 1/4 hours for loaf, 40 to 50 minutes for smaller loaves, depending on size. Makes 1 large loaf or 2 small loaves.
