WEST COAST PASTA 
8 oz. spaghetti
4 tbsp. butter
4 tbsp. olive oil
1 c. finely chopped onions
1 clove garlic
6 plum, ripe peeled tomatoes (fresh)
1 c. black olives, sliced
1 c. parsley, chopped
Salt and pepper

Prepare spaghetti as usual. Saute onions and garlic in butter and oil until soft and transparent. Add tomatoes and cook until tomatoes are mushy. Add olives and cook about 5 minutes.

Pour sauce over cooked spaghetti. Add salt, pepper and parsley. Toss lightly until spaghetti is coated. Add Parmesan cheese if desired.
