TOM'S SQUASH STUFFINGS 
2 packs Stove Top stuffing mix
2-3 sm. summer squash
1/2 pt. sour cream
1/4 lb. two different cheese, grated (example: cheddar and colby)

Bring water to a boil in a medium saucepan. While waiting for water to boil, begin to make the stuffing. Wash and thinly slice squash. When water is boiling, cook the squash until tender.

After the squash and stuffing are done, mix together in oven proof casserole dish with sour cream to desired consistency. Sprinkle cheeses on top. Bake at 350 degrees until cheese melts.
