YELLOW SQUASH CASSEROLE 
1 can cream of chicken soup
5 squash, cubed
1 lg. carrot, grated
1 onion, chopped
1 sm. jar pimentos
1 sm. carton sour cream
1 tsp. salt
1 1/2 tsp. black pepper
1 stick butter, melted
1 pkg. chicken flavor Stove Top stuffing

Cook squash until tender. Drain. Add soup, carrot, sour cream, seasoning, butter, salt, onion, pimentos, 1/2 of stuffing. Pour in casserole dish, sprinkle with remaining stuffing. Bake 35 to 40 minutes at 325 degrees.
