BAKED LIMA BEANS 
1 lb. dried lima beans
1/2 tsp. baking soda
4 oz. salt pork or 5 strips bacon
1 onion, peeled
1 tsp. dry mustard
1 1/2 tsp. salt
5 tbsp. brown sugar or molasses
1/4 tsp. paprika
1 c. bean liqueur or water
1 c. catsup

Pick over and wash the beans. Cover with 1 1/2 quarts water and soak overnight. Do not drain. Add soda and meat. Parboil 1/2 hour. Drain off liqueur, saving two cups. Add seasonings and catsup and turn into a covered baking dish. Bury the onion in the center of the beans and add 1 cup of the liquid. Cover and bake in at 350 degrees until beans are soft (about 3 hours). Add more of the extra bean liquid during baking if beans seems too dry. Uncover last 1/2 hour of baking and increase heat to 400 degrees to brown top slightly. Serves 10.
