GREEK MEATBALL SANDWICHES 
1 egg, beaten (or Egg Beaters)
1/4 c. skim milk
1/4 c. fine dry bread crumbs
1/4 c. snipped parsley
3 tbsp. finely chopped onion
4 tsp. toasted sesame seeds
1 clove garlic, crushed
1/4 tsp. crushed mint (more if fresh mint is used)
1/2 tsp. salt
3/4 lb. lean ground beef
2 lg. pita bread, halved
1/2 c. shredded lettuce
1 med. tomato, finely chopped
1/4 c. plain low-fat yogurt

Combine egg and milk. Stir in crumbs, parsley, onion, 3 teaspoons sesame seeds, garlic, mint and salt. Add ground beef and mix well. Shape into 1" meatballs. Spray a large skillet with non-stick spray shortening. Brown meatballs. Cover and cook over low heat for 5 to 10 minutes or until done. (Can also be baked on a rack in the oven.) With a slotted spoon, remove meatballs from pan and drain on paper towels. Place meatballs in pita pockets and top with lettuce, tomatoes and yogurt. Sprinkle with remaining sesame seeds. Can be served hot or cold. NOTE: This is a heart healthy dish that is low in fat and cholesterol. 4 servings.
