DEER PEPPERONI OR BEEF 
5 oz. deer or beef
3 heaping tbsp. Morton tenderizer
2 tsp. crushed red pepper
1/4 tsp. garlic powder
1 tsp. fennel seed
1/2 tsp. anise seed
2 tsp. liquid smoked salt

First day, mix, cover, and refrigerate.

Second day, same.

Third day, same.

Fourth day, form into long rolls. Place on broiler pan on bottom shelf of oven at 145 degrees for 7 hours. Turn every 1 1/2 to 2 hours.
