CHEESE BLINTZES 
12 crepes
1 lb. farmers or ricotta cheese
1 egg yolk
1 tsp. salt
1 tbsp. melted butter
2 tbsp. sugar
1 tsp. lemon juice

Mix all ingredients and fill crepes, folding envelope style. Place seam side down in a greased baking dish. Brush tops with butter. Heat at 350 degrees for 10-15 minutes. Can be made up early and refrigerated until serving time. Just extend heating time to about 25 minutes.
