CHEESE BLINTZES 
2 loaves soft textured sandwich bread, crusts removed
2 (8 oz. each) cream cheese, softened
1/3 c. sugar
2 egg yolks
1 1/4 c. butter
Mix 1 c. sugar & 2 tsp. cinnamon together
2 (16 oz. each) cartons of sour cream

Roll each bread slice until flat. Mix cream cheese, sugar and egg yolks. Spread mixture on each slice of bread and roll up. Melt butter and coat each roll. Coat each bread roll with cinnamon and sugar mixture. Can be frozen at this point. Cut each roll in half and place on cookie sheet. Bake at 350 degrees for 15 minutes. Serve with sour cream in a bowl to dip. Makes 7 dozen.
